Happy Diwali and Happy new Year to all my readers! In my mother tongue, we say “NutanVarshAbhiNandan”. So this year, I couldn’t do the Rangoli with traditional Sand Colors. So I used up all the decorations I had from India to turn it into Rangoli. Below are my pics.
This is not the best way to start the blog for Eggplant Parmesan recipe, but I am not a big fan of Eggplant. This came up on my to try list as its one of the favorite dish of my favorite person. Also its special, as it reminds me of my first date. I have never tasted this dish till date. 4 years ago on my Birthday, my husband and I first met in person and he took me to Italian restaurant for our date. I was a little nervous anyway because of first meeting and I don’t know what to order at Italian restaurant except soup/salad. I live it up to my Husband and he ordered Eggplant Parmesan. I only ate spaghetti on that dish. Anyway long story short, I have nailed this dish according to my hubby better than the restaurant style without even trying it once. Not that I am very proud of not eating vegetables here.
So, on my plate I have bruschetta, Pasta, Pasta muffins, and Eggplant Parmesan. Everything that we ordered on our date except Pasta muffins. Recipes I followed from different food blogs.
Garlic Bread/ Bread
Fresh thyme, Basil and Parsley.
Mozzarella and Parmesan cheese to sprinkle.
- Put all the ingredients on Garlic bread and bake on 375 F for 5-7 minutes.
