Variety Stuff Tortillas/ Stuff paratha/ Leftovers Recipe

 

I like the concept of stuff paratha. Its very versatile food. Basically, you can try any combinations or leftovers you wish to stuff in paratha. Method is same but this post is mainly for introducing vast possible options. So, dont miss to check out the Possible stuffing options below.

Possibilities are endless: Onion-Papad-Cilantro Stuffing,  Rice Veggie Stuffing, Aloo stuffing (potato), Gobi stuffing (cauliflower), Shredded Cabbage stuffing, Paneer Stuffing, Onion Stuffing, Garlic Stuffing, Mashroom Green pepper stuffing, Crushed balck beans and Avocado Cilantro stuffing, Avocado-Cilantro-Lime-Rice stuffing, Hummus Stuffing, Chickpeas paste stuffing, veg noodles stuffing, and so on …

To share the photographs, I have made Palakh paneer paratha. Its not a new recipe but I was introduced to this method by a lovely friend Aditi Shah. Below are the ingredients I used:

Palakh Paneer/ Spinach-Cottage Cheese

For stuffing: 3 cups finely chopped spinach leaves, 1 cup paneer crumbs (cottage cheese crumbs), 2 tbsp blue cheese (or any of your choice, I like mozzarella too), chat masala, salt per taste,  1 tbsp garam masala, 1/2 tbsp kitchen king masala(optional), red pepper per your taste, 1 tbsp onion powder , 1 tbsp garlic powder, 1/2 tbsp Ginger grated, 1/2 tsp aamchur powder/ 1 tbsp lemon juice.

For Paratha, Tortilla: 3 cups wheat flour, salt per taste, warm water as required, 2 tbsp oil.

How to make:

  1. First, make a dough for Roti ( as soft as possible, you can handle). Kneed for 5 minutes and let it sit underneath wet muslin cloth for 30 minutes before use.
  2. Combine all the ingredients and mix it well. Note, that you don’t need to boil spinach. We are going to use raw spinach salad to stuff. Once its stuffed inside paratha, it will cook with parathas.
  3. Take one medium size ball dough and roll it big enough. put as much stuffing as you can handle to roll the next round. close it properly and roll it again. Softer the dough, easier it is to roll the stuff paratha.
  4. Now on electic griddle or tava, shallow fry the paratha/tortilla by using very less amount of oil/ghee. And its ready.

Other interesting Stuffing to give it a shot:

Onion-Papad-Cilantro Stuffing: 1 cup finely chopped onions, 1 garlic 1 papad(fried/microwave), 1 cup cilantro finely chopped, 1 tbsp blue cheese (or any of your choice, I like mozzarella too), chat masala, salt per taste,  1 tbsp garam masala, red pepper per your taste, 1 tbsp onion powder , 1 tbsp garlic powder (if you use regular papad), 1/2 tbsp Ginger grated, 1/2 tsp aamchur powder/ 1 tbsp lemon juice.

Rice Veggie Stuffing: (leftover veg cubji , rice): Mix up potato/flower/chickpea/peas subji with left over rice, 1 tbsp blue cheese (or any of your choice, I like mozzarella too), chat masala, salt per taste,  1 tbsp garam masala, red pepper per your taste, 1 tbsp onion powder , 1 tbsp garlic powder (if you use regular papad), 1/2 tbsp Ginger grated, 1/2 tsp aamchur powder/ 1 tbsp lemon juice.
